Gluten Free Deep Dish Pizza Crust

Ingredients
- 200 g Steamed Chickpea Flour
- 24.0 g Tapioca starch
- 24.0 g Rice flour
- 25.0 g Corn meal
- 2.0 g Xanthan gum
- 2.6 g Psyllium fiber
- 7.0 g Instant yeast
- 5.0 g Sugar
- 5.0 g Salt
- 0.2 g Onion powder
- 0.2 g Garlic
- 6.4 g Baking powder
- 204.0 g Water
- 10.0 g Olive oil
Instructions
- In mixing bowl add dry ingredients and blend
- Add very warm water and oil, mix dough 1 minute on low speed, 2-3 minutes on medium speed
- Form dough into disk, cover and let dough rest 15-20 minutes
- Roll out and shape into 8" round pan coated with oil
- Proof 15 minutes in a warm place
- Parbake 10-11 minutes at 375°F (190°C)
- Process with desired toppings
- Bake 23-28 minutes at 350°F (176°C)
- Cover edges with foil if crust gets too dark
