Ingredients

  • 200 g Steamed Chickpea Flour
  • 24.0 g Tapioca starch
  • 24.0 g Rice flour
  • 25.0 g Corn meal
  • 2.0 g Xanthan gum
  • 2.6 g Psyllium fiber
  • 7.0 g Instant yeast
  • 5.0 g Sugar
  • 5.0 g Salt
  • 0.2 g Onion powder
  • 0.2 g Garlic
  • 6.4 g Baking powder
  • 204.0 g Water
  • 10.0 g Olive oil

Instructions

  • In mixing bowl add dry ingredients and blend
  • Add very warm water and oil, mix dough 1 minute on low speed, 2-3 minutes on medium speed
  • Form dough into disk, cover and let dough rest 15-20 minutes
  • Roll out and shape into 8" round pan coated with oil
  • Proof 15 minutes in a warm place
  • Parbake 10-11 minutes at 375°F (190°C)
  • Process with desired toppings
  • Bake 23-28 minutes at 350°F (176°C)
  • Cover edges with foil if crust gets too dark
