Gluten Free Thin Pizza Crust

This basic gluten free pizza crust dough can be rolled quite thin and still hold its shape out of the oven. Makes an excellent frozen-pizza style crust.

This formula makes a crust similar to a frozen pizza crust

Ingredients

  • 100.0 g Steamed Chickpea Flour
  • 12.0 g Tapioca starch
  • 12.0 g Rice flour
  • 1.8 g Instant yeast
  • 2.0 g Xanthan gum
  • 5.0 g Psyllium fiber
  • 2.5 g Salt
  • 0.4 g Onion powder
  • 0.2 g Garlic
  • 2.5 g Baking powder
  • 82.5 g Water
  • 10.0 g Olive oil

Instructions

  • Mix dough 1 minute on low speed, 2 minutes on medium speed
  • Let dough rest 15-20 minutes
  • Form into desired shape
  • Bake 18-22 minutes at 350°F (176°C)
