Zesty and flavorful, this Italian dressing emulsion, made from Steamed Chickpea Flour, holds together surprisingly well. The Steamed Chickpea Flour gives the dressing a wonderful smooth texture, with a nice coloring.

Italian Dressing made with Steamed Chickpea Flour

Ingredients

  • 50.0 g Steamed Chickpea Flour
  • 36.0 g Italian Seasoning Mix
  • 0.5 g Xanthan gum
  • 400.0 g Water
  • 56.0 g Vegetable oil
  • 50.0 g Vinegar

Instructions

  • Cook over medium heat in double boiler for 15-20 minutes, or until 180° to 185°F (82° to 85°C)
  • Remove from heat, cool in ice bath while stirring
  • Add oil and vinegar and mix until blended and store
