Chickpea Fortified Cinnamon Roll
This cinnamon roll contains over 20% chickpea flour by total weight! Extra fiber and protein without sacrificing flavor or eating properties.
Ingredients
- 540 g Bread Flour
- 400 g Steamed Chickpea Flour
- 60 g Vital Wheat Gluten
- 470 g Water
- 25 g Instant yeast
- 20 g Dextrose
- 90 g Sugar
- 60 g Butter
- 30 g Cake shortening
- 115 g Liquid whole eggs
- 20 g Nonfat Dry Milk
- 5 g Baking Powder
- 2.5 g SSL
- 18 g Salt
- 2.5 g Flavor
Instructions
- Mix at medium speed until dough "cleans" the mixing bowl and is smooth
- Dough temperature: 80° to 82°F (27° to 28°C)
- Fermentation: 25-30 minutes under ambient temperature
- Note: Dough may be divided without delay and retarded for makeup at a later time
- Makeup: Sheet dough to desired size and thickness and cover with cinnamon smear
- Roll up dough into a long cylinder and cut into pieces of desired size
- Proof: To full proof at 104° to 108°F (40° to 42°C) and 85% relative humidity
- Bake time: 15-18 minutes at 375°F (191°C)
