Chickpea Peanut Butter Cookie (CP100-S)

Beat together shortening, sugars, vanilla, and peanut butter until smooth

Blend together chickpea flour, baking soda, and salt, add to above

Add water and mix into a cohesive dough

Scale 18 grams with cookie scoop on baking sheet

Use fork to make a cross-hatch design and flatten each cookie to .5″ thickness

Bake time: 11-13 minutes at 340°F (171°C)
